Ten years after his return to Cérvoles Celler in 2014, Tomàs Cusiné presents Tros del Tossal, a red wine made one hundred percent with the Syrah grape variety.

Tros del Tossal is a parcel wine from a farm planted in 2000 that the winemaker Tomàs Cusiné’s wine company had leased until it acquired it in 2018. It is from then on that, observing some already mature vines, Cusiné discovers the fullness of the vineyard and puts all his interest in working it individually to make the monovarietal that he decides to put on the market with the 2021 vintage -it was hand-harvested on October 7th and 8th-.
 
The Syrah grape from the plot from which Tros del Tossal is produced is very unique due to the influence of the aromatic herbs with which it coexists, which give it a very marked personality. Undoubtedly, the 9-month aging in 4 225 L French oak Radoux barrels helps. In addition, the behavior of the vine, the strength and vigor of the plant give it a very powerful coloring capacity, aromas of dried red fruits at the same time as balsamic and, in the mouth, silky tannins that persist for a long time.

Tros del Tossal, like the rest of the wines from Cérvoles Celler – the first mountain viticulture project in the country, founded in 1997 – is organic and managed using biodynamic and regenerative practices. Total production is 1,129 bottles.

Tros del Tossal 2021

The vineyard is planted on a small plateau at the entrance of Pobla de Cérvoles, on the north face of the Llena mountain range, within the Tossalets area.
In ancient times, it was called “Tossal dels Moros” and had a funerary use due to its strategic location (an elevated place facing Mecca). The plot can be seen from the highest hill on the estate, where remnants of an Arab castle still remain.

Currently known as Tros del Tossal, it is a 1.16-hectare parcel at 724 meters above sea level, planted in 2000 and 2001. The soil is loamy, calcareous, poor, sandy, and very gravelly, ideal for the Syrah variety.
The westerly winds during the day and the sea breezes in the evening carry the scents of scrubland plants to the vines. Aromatic herbs like wild chamomile, everlasting, thyme, and rosemary leave a strong imprint on the character of Tros del Tossal.
Dry-farmed land with low-yielding vines (4.000 kg/ha), which, now in their maturity stage, produce small, concentrated grapes harvested at the perfect balance between fruit freshness and tannin ripeness.

Farming:
Respectful agriculture. Certified organic management with biodynamic and regenerative practices.

Climatology:
Mediterranean continental climate with strong thermal contrasts between day and night, thanks in part to the constant winds that blow in the area—westerly winds in the morning and sea breezes in the afternoon. Low annual rainfall of 395 mm.

Harvest:
Picked on September 21, 2020, with the best grapes selected in the field at harvest time.

Winemaking:
Fermentation in a stainless steel tank for one month, with daily pump-overs and at a temperature between 19 and 25ºC. Aged for 1 year and 1 month in four French oak barrels of 225 liters. Bottled on March 30, 2022. Production of  596 bottles.

Tasting note:
Clean and bright appearance, with an intense violet-red color representing the vibrant character of this deep-bodied wine. On the nose, it offers intense aromas of dried and candied red and black fruits, violets, and many balsamic and spicy tones, with aromatic herbs typical of the area. On the palate, it is silky, with present tannins that make the wine long and persistent.

Pairing:
Red meats, stews, cheeses. Due to its colloidal intensity, it may present sediment, which does not affect its quality.
