Gran Reserva Original Brut Nature 2019
“Original” seeks to connect each sip of cava with the land and the advances that will first cultivate these vines, with the ancient art of winemaking, and with the dreams and passions that will give life to Rovellats.

All the grapes used in the production of this cava and all Rovellats cavas come from their own vineyards, which grow in the fields surrounding the winery. In addition, the name “Original” is a tribute to the first bottle of Rovellats Gran Reserva cava, which marked the beginning of their winemaking tradition.

Varieties
65% Xarel·lo, 20% Macabeu, i 15% Parellada.
Tasting Note
Straw yellow color with bright golden tones. Abundant bubble very small and persistent, with regular detachment. Good crown and perlage.
Very clean and powerful although fine on the nose. Aromas of long aging on mums with fruity background and floral notes, reminiscent of fresh apples and in the almond blossom.
In the mouth it is very balanced, intense in flavors and round, with moderate acidity and good persistence. Well-structured, dry, tasty and smooth, with an elegant and long finish, which perfectly combines fruity and aging aromas. Broad, powerful and complex retronasal route..
Pairing
In general, all food. Meat Fatty Fish, Pâtés and Stewed or Roasted White Meats.
Temperature to serve 6ºC – 8ºC.

THE ESSENCE OF ROVELLATS
Rovellats is a story of love for the land, people and cava. A family project that is currently managed by the third generation of the family and that from Sant Martí Sarroca (Barcelona) has been evolving from a work philosophy based on quality. Under the 15th century farmhouse and located at a depth of 12 meters, the Rovellats cellar is unique in the world for its original six-pointed star structure and a central rotunda.
The etymological origin of Rovellats comes from the Latin “robiculu”, reflecting its location in a meander of the Foix River, characterized by its high humidity. Since medieval times, this enclave has been the heart of an estate, an architectural complex that includes everything from 10th century Romanesque elements to modern innovations.
Currently, Rovellats produces 100% of its production with grapes from its own vineyards.
With a strong commitment to sustainability, the winery is powered by renewable electricity, purifies 100% of its water and has all its vineyards certified as organic by the CCPAE. They have even reduced their use of packaging by 35% and the weight of their bottles by 8%, thus minimizing their environmental footprint.
