Sara and Gerard have transformed fifty hectares in the Penedès region into a laboratory for organic viticulture. Their project combines artisanal production, minimal intervention, and a wine tourism proposal that merges hiking, orienteering, and tasting in the great outdoors.
From producers to winemakers with their own vision

Sara and Gerard, residents of Les Pobles and Rodonyà, have covered every stage of the agricultural world before founding Estol Verd. As producers, agricultural service providers, and estate managers, they know the sector from the inside out. Now, they control the entire cycle, from the vine to the bottle. They cultivate 50 hectares of vineyards under certified organic criteria and soil regeneration practices.
The ten varieties they work with include Macabeo, Parellada, Xarel·lo, Chardonnay, White Grenache, and Muscat of Alexandria as whites; and Sumoll, Tempranillo, Syrah, and Black Grenache as reds. Every year, they select the best grapes to craft white, rosé, and red wines with their own personality. They also produce sparkling wines using the ancestral method. Harvesting is done manually and with precision, ensuring only grapes in optimal condition reach the winery. The goal is not to produce a high volume of bottles, but to faithfully express the limestone terrain and the Mediterranean climate of the area.
Minimal intervention from the vine to the bottle
Estol Verd is committed to letting the grapes speak for themselves. The winemaking process respects the natural cycle of the wine, with minimal intervention that allows each variety to showcase its primary characteristics. There are no oenological artifices or forced corrections: what reaches the bottle is the fruit of field work and time.
The white varieties reflect freshness, balance, and Mediterranean character, while the reds express the strength of the calcareous soil where they grow. Even bottling and labeling are carried out with care and dedication, closing a process that began months earlier in the vineyard. This commitment to economic and environmental sustainability is not just a slogan: it is the foundation of a project that aspires to reconcile production, processing, and marketing without compromising on quality or consistency.
Orien-tast: hiking, orienteering, and hidden wine in the fields
Beyond the bottles, Estol Verd offers a unique wine tourism experience. Orien-tast combines hiking, orienteering, and group wine tasting, with various routes crossing the estates of Rodonyà.
Participants discover wines hidden at different points along the route while exploring the viticultural landscape, almond trees, olive trees, and the agricultural environment that changes color with the seasons.
The activity is supported by a namesake app that guides the route and helps find the hidden wines. It also includes a playful component: participants can self-assess their tasting level individually or debate the sensory aspects of each wine as a group. It is a healthy activity suitable for all ages, where even the little ones can participate by searching for their own “treasure.” Wine, nature, and territory merged into an experience that goes far beyond the glass.
